Walter’s in Flying Horse opened in March 2017, up the hill from the bustling Bass Pro complex. It’s deliberately more in the neighborhood, says David, a decision made to allow them to achieve a “mom and pop feel” through first-name rapport with regulars and community fundraising events.
The Hammetts first developed the pizza recipes they shared with Kienast at Piza4U, tweaking them at pizzerias they’ve run in Indiana and California. “There’s a little bit of California influence, a little bit of Indiana influence, and Mike’s put his touch into it,” says David. “You can’t really pinpoint a region.” He adds that sauce, crust and toppings are made daily, including house meatballs.
Walter’s is also a taphouse. Debby stocks the Springs spot’s 20 taps with a rotating selection, prioritizing Colorado beers. David says each store does different beers — they see “a big difference in tastes between what Denver wants and what Colorado Springs wants.” What that difference is?
