After a month and a half in business, The Sundance has closed, was sold and, as of Oct. 18, has reopened as Villa Palmer Lake once more. It’s now owned by Matt Beck, who previously sold kombucha for Beverly Hills, California-based GT’s Living Foods, and head chef Anthony Ramon, who was the executive chef for a previous incarnation of the Villa from 2000 to 2005. Adam Guller stayed on and is now co-manager with Ryan Avila, a former bartender at Littleton’s Angel’s Share Wine Pub.
The Villa is once more an Italian restaurant, offering a mix of modern and classic dishes. Expect handmade noodles and pizza dough, with vegan, vegetarian and gluten-free options available. Price-wise, entrées mostly land in the $16 to $18 range.
