V Bar remains open after buyout, changes coming

Michael Carsten has purchased and, patiently, begun renovations on V Bar (19 E. Kiowa St., facebook.com/vbarcs). He bought the spot in early June, having wanted a place of his own for some time. He’s been in the Springs’ restaurant industry for nearly 20 years. He’s done stints as general manager and bartender at the Blue Star and was most recently a manager and bartender at Shuga’s, from 2012 through April 2017.

V Bar is open, but Carsten is working on a new façade, pairing with artistically inclined friends and family. He doesn’t plan to be finished until well into 2018.

“It’s taking perhaps a little longer than a corporate restaurant would to get it where I want it, but I’m not in a hurry,” he says. He’s also working on a complete rebranding, with a yet-unannounced new name, menu and cocktail program.

“We’ve already changed the drink menu completely, and we’re going to keep changing that...” Carsten says. “We’re certainly looking to be a part of the upper echelons of the cocktail culture in town and in the state.”

Carsten’s building his bar and kitchen team, though, like the bar’s new name, he’s playing it close with details.
