The Cow Pub & Grill reopens as Single Barrel Craft Burgers and Brews off Powers

Northeast Springs drinkers just got a local-option upgrade. The Cow Pub & Grill closed in March, and after a brief transformation, it reopened on Wednesday, May 16, as Single Barrel Craft Burgers and Brews.

“With The Cow, we’ve been here about seven years, and it’s just gotten so hard, with all the big chains coming in,” says co-owner Chuck Schafer. “We can’t compete with them money-wise, so we have to be better with our service and be better with our food and be really focused on local.”

To that end, Chuck and brother/co-owner Heath Schafer decided in December 2017 to reinvent the space entirely. He says the redesign makes it more of a restaurant than a bar. They’ve kept the rooftop area with full bar and fire pit, and they’ve eaten three parking spaces to build a patio space with its own fire pit.

For the menu, Heath has teamed up with chef Brandon Martin of the Schafer brothers-owned Purple Toad Social Tap & Grill, anchoring their offerings on burgers with half-pound patties. For the bar, they’ve brought in Tori Binkowski, bartender at the Schafer/Kathy Guadagnoli-owned Prime 25 and formerly of 503w, to build the cocktail program. Single Barrel also offers 42 whiskeys, with “at least a dozen” locally distilled options, according to Schafer. They’ve also added eight taps for a total of 24, at least half of which will host locally brewed craft beers.
