Back in March, Paravicini's Italian Bistro (2802 W. Colorado Ave., paravicinis.com) chef/owner Franco Pisani announced a new wine and antipasto bar expansion, called Sopra, which opened July 3rd. The new space includes both the upper floor and a rooftop patio. Pisani plans to focus the menu on small plates, desserts and the like.
In a press release he elaborated: "The Sopra menu will feature unique items like an Italian version of shrimp and grits made with polenta; crab arancini — Italian risotto balls stuffed with lump crab with a pesto cream sauce; and caponata — a tapenade of eggplant, capers, olives, tomatoes, onion and garlic."
In addition to small plates, diners will be able to order from Paravicini's expansive 100-bottle wine list. Pisani has also planned a list of Colorado-inflected takes on classic Italian cocktails, as well as an ample selection of fine spirits typical of a big-city wine bar, like cognac, grappa and port.
