Smiling Toad Brewery offers IPAs galore

I’m at Smiling Toad Brewery photographing a pup for the Indy's Summer Guide issue, so naturally need a post-shoot treat. My helpers order the superlative Callipygian and Relativity IPAs ($6/pint), two of five on tap; I get a flight ($10/five 5-ouncers). The IPa Freely mixes Citra, Amarillo and Chinook hops toward a bitter, grapefruit crescendo. The Ella Lavender common exudes the herb in the nose and flavor, though owner Biff Morehead still isn’t fully satisfied, wanting to play more with a pear addition to offset a black pepperiness. Next: the Orange Creamsycle IPA, Piña Colada IPA and Black Currant APA. The latter builds out of the Callipygian recipe, adding fruit purée that smooths the bitterness, finishing rich with nice lingering tartness. The hazy-hued Piña Colada bursts with pineapple and coconut aromas, from real fruit, utilizing the tropical citrusiness of Mosaic hops. The Popsicle homage bears an astringent orange-citrus taste from orange blossom water and an experimental hop, finishing sweet (from lactose) and cream-soda-like.
