“We’ve been talking about doing a food truck for a while,” Dillingham says. “We’ve messed around [in the kitchen] a little bit, doing breakfast egg rolls, trying different recipes. We decided to do a food truck based on that egg roll idea.”
But whatever their credentials, Dillingham says the customer response has been good. Outside of the brewery circuit, they spend some afternoons near Widefield Community park, near where they grew up.
“The response there has been crazy,” Dillingham says.
