Omelets Etc. expands to southeast side

The original Omelets Etc. launched under the hands of former longtime IHOP employees in 2010 and remains steady, while this spot opened in mid-2017. It feels right at home in the hoppin’ Hancock Plaza Shopping Center: affordable, filling and, if expectations are set at diner level, satisfying. Thin, generic coffee ($1.99) sets the tone, with plenty of flavored creamers and many offers for top-offs. We order the Mexican Skillet and Migas con Chorizo (each $7.99, including toast or pancakes, and tortilla choice, respectively). On both, we crave more browning and crispness on the potatoes: country-style potatoes as the skillet’s base, side hash browns for the migas. Mild but flavorful house green chile highlights the skillet’s scrambled eggs and seasoned-not-spicy chorizo. Add Cholula. Same with the tame migas, a mushy chilaquiles cousin made by scrambling eggs with tortilla strips, chorizo and jalapeños under unmelted shredded cheddar.
