Though one Google result insists that the key to a good gumbo is good okra, the rest of the Internet is fairly sure that the secret lies in the roux. And what makes a good roux? (No, silly Internet, not porn.) Don't overcook it; don't overheat it; and don't under-stir it. So with that in mind, hit this morning's Mumbo Jumbo Gumbo Cook-Off in Soda Springs Park (1016 Manitou Ave., Manitou Springs, The festivities kick off shortly after 10:45 (followed by the Carnivale Parade at 1 p.m. (lineup begins at 12:30), and tastings of gumbo from about 20 amateur and professional cooks are available two for a buck. — Bryce Crawford
