There’s an intersection of Christianity and coffee at most of the Springs’ best roast/drink houses. Kawa Coffee
leads with a little God talk (online) but nothing overtly catches the eye during a visit that might turn off secular sippers. Service impresses and offerings show quality, including house-made syrups and baked goods, like a blueberry-lemon scone ($3.50) blushing with purple berry bleed, dense and doughy when warmed, finishing with a faint citrus wisp. Santa Cruz, California-based Cat & Cloud’s The Answer blend of Colombian-Brazilian-Ethiopian beans informs my Rowdy Raccoon breve latte ($4/12-ounce), a fun special that places a shake of cayenne in the portafilter with the espresso before a shot’s pulled (I could go for more), also incorporating a healthy squeeze of local honey in the mug (which sinks to the bottom for a late treat). It’s expectedly velvety and not too sweet, with the medium roast folding into the cream for general smoothness, not too origin-expressive, but satisfying.
