We find this long-operating barbecue operation at Metric Brewing: a white pickup towing Jenny the barbecue trailer around and proffering beef brisket, pulled pork and smoked chicken in a variety of forms. We’re feeling spicy and sassy, so we pick up an order of Buffalo Mac ‘n Cheese to go with a glass of Metric’s Hoser maple bourbon porter. By default, the mac ‘n cheese blends buffalo-sauce-tossed smoked chicken with cheesy rotini, topped with blue cheese crumbles, but we add sautéed bell peppers to bump up the nutritional content.
They create a nice textural mix-up, and their flavor also plays well with the smoky, mildly spicy chicken. That, in turn, plays nicely with the cheesy sauce, and after we mix the punchy blue cheese crumbles into the rest of the sauce, they balance out nicely as well.
Metric’s porter drinks dark and rich, almost breakfast-y thanks to mild maple flavor, coffee notes from the malt, with bourbon-soaked oak adding more to mouthfeel than flavor.
