Find healthy treats at Karen’s Corner Bakery

February’s quieter around Old Colorado City, and the lack of foot traffic isn’t doing Karen Bechtel any favors in the off-the-main-drag location of her grain-free paleo bakery, Karen's Corner Bakery. Further, she’ll have to change the name in the near future for copyright reasons; when we stop in, she speaks of another business losing a suit to a corporate Corner Bakery, a fight she says she’s elected to dodge. But her product’s good — we enjoy one of her paleo bars and a cup of adrenal hot chocolate. The former’s packed with almonds, pumpkin seeds, sunflower seeds and dried fruit, full of crunch yet tender with a salty-savory lead that mellows under coconut sweetness, finishing with lingering coconut oil on the lips. Saturated fats aside, it’s filling and delicious. While we can’t speak to its purported health benefits, the maca-backed hot chocolate bears minimal sweetness, even with a suggested dollop of honey, but it’s richly chocolaty with a subtle spice all the same.
