- Atmosphere Gastropub's Bourbon Bacon Jam.
Ingredients1 lb. bacon, cut crosswise into ¼-inch strips
1 large yellow onion, small dice
¼ c. light brown sugar
1 tbsp. garlic, minced
½ tsp. cayenne pepper
½ tsp. coriander
½ c. bourbon
½ c. brewed coffee
2 tbsp. maple syrup
¼ c. sherry vinegar
¼ c. ketchup
PreparationCook bacon strips in a small pan over medium heat. When the bacon’s crispy, discard all but 1/4 cup of the bacon fat. Reduce heat to low, then add onions to pan with bacon and cook until soft. Add brown sugar, minced garlic, cayenne pepper and coriander, then cook for 5 minutes. Add bourbon, coffee, maple syrup and sherry vinegar and cook until 90 percent of the liquid is cooked out, stirring occasionally. You should still have “sauce” in the pot. Cut the heat and stir in ketchup. Remove from heat and refrigerate or enjoy immediately.
Makes about 3 cups.
