- Dos Santos' avocado tomatillo salsa
Ingredients4-5 small-to-medium tomatillos, husks removed, washed and quartered
1/4 medium white onion, chopped
1 clove garlic, peeled
1/2 serrano pepper, stem removed, seeded for less heat if you like
1/4 c. fresh cilantro
1 tsp. fresh lime juice
1/2 avocado, seed and skin removed
Pinch kosher salt
Water, if needed
PreparationIn a blender, combine all ingredients except the optional water. Pulse until the ingredients begin to emulsify, then blend on high speed for 30 seconds. If the ingredients are not blending, stop the blender, add a splash of water, push the ingredients down, cover and continue blending. Once the sauce is smooth and creamy, serve and enjoy. This recipe makes about 11/2 cups of salsa, which will keep refrigerated for two days in a sealed container.

AftertasteThis salsa has it all: acidity, heat, sweetness and an addictive creaminess. This is a traditional salsa that can be found in taquerias all throughout Mexico, but our best memories are when my Mom made this at home for my brother and me as kids. Put it on tacos, eggs, steak or fish, or just eat it with tortilla chips. This salsa will make your mouth sing with joy.
