Peek a Boulangerie
Longtime Springs baker Shawn Saunders, who formerly sold wholesale to the likes of Adam's Mountain Café and McCabe's while also operating a bread stand for many years at the Colorado Farm and Art Market, has returned to the scene after a several-year hiatus.
Saunders launched The Sourdough Boulangerie (645-2905) last week, based out of Orchard Ovens Bakery (3 E. Bijou St.).
Orchard Ovens will continue to handle its own sweet baked goods, while Saunders will prepare an array of bread loaves for retail sale up front as well as special or wholesale order. As the business name implies, Saunders leads with "old world techniques," offering traditional European loaves as well as some new-world styles, "with a twist."
He strictly uses all-natural ingredients, most of them local, including wheat grown locally and milled in Platteville, Colo., and spices from both Savory Spice Shop and Extraordinary Ingredients. One recent day's menu promoted "sourdough, ciabatta, sweet potato brioche, cinnamon raisin walnut, and bacon cheddar whole wheat along with a few other surprises."
Legacy Philly sandwich spot, Trivelli's Hoagies (trivellis.net), open in the tiny space at 2729 N. Nevada Ave. since 1976, will be reopening on Monday, Feb. 17 — three doors down in the former Bean Bandit location at 2819 N. Nevada Ave. An employee says the nearly 20-sandwich menu will remain the same, but hours will expand. The reason for the move after all these years, he says, is "expansion," referencing the spacious seating area that the original spot lacks.
Steve Trivelli, son of founders Barbara and John, continues to run the shop, utilizing nearby Ranch Foods Direct beef for classic items like the steak hoagie or meatball sub.

• The Colorado Springs Choral Society's 29th annual Chef's Gala & Silent Auction at the Antlers Hilton (4 S. Cascade Ave., cschorale.org), from 5 to 9 p.m., Sunday, March 16; tickets to try gourmet provisions from 24 local businesses are $95.
