The military-themed 1350 Distilling (520 E. Pikes Peak Ave., 1350distilling.com), which the Indy first wrote about over a year ago (see Side Dish, July 18), finally opened its doors in late August, selling its spirits by the bottle on-site as well as in local liquor stores. Currently, look for a Blue Jacket Rum (from Louisiana molasses and Colorado sugar beets), Minuteman Vodka (also from Colorado sugar beet), and Guardian Bourbon (via a distillery in Lawrenceburg, Indiana; three-year barrel aged and 99 percent corn). House cocktails (again with military-inspired names like “smoke grenade” and “The Gitmo”) served at the tasting room include variations of the house spirits with Pikes Peak Lemonade Company lemonades and simple syrups, and Rocky Mountain Soda Company sodas. Look for regular food truck service on-site during normal Friday-Sunday service hours.
