Let's talk a little food and drink ahead of the holiday weekend, if you're planning to take time on the town versus hovering over the backyard grill.
Firstly, there are two grand openings to note:
• The Stagecoach Inn
has soft opened in Manitou Springs under the new ownership of Paul Jakubczyk
, also of PJ's Bistro
in Old Colorado City. Chef Sean Gibbons
left Walter's Bistro to lead the culinary direction, which maintains a focus on Colorado cuisine, but with new recipes for any classic items and many entirely new plates. Manager Bobby Vimny
comes from an extensive culinary and cocktail background, most recently operating his own catering company in Aspen a well as working for the swank Hotel Jerome. In speaking with all three, the team has just completed a breakneck, 12-day overhaul of the space following purchase of the building. "You won't even recognize it," says Vimny. We'll have more to share in my Side Dish column soon, but be among the first in town to check it out this weekend.
• Chef Victor Matthews
says the Black Bear Distillery
will hold a sneak peek grand opening on July 4th (see their Facebook page
for updates on the exact timing). He plans to offer test tastings of his upcoming products as well as offer barbecue outside by suggested donation. Matthews says proceeds will benefit his Restaurant As Mission
initiative and various charities. He calls the weekend affair a "low key, soft opening," on the heels of finally receiving his new still for big-volume in-house production.
Next up, Red Leg Brewing Company
will host its second anniversary party from noon to 10 p.m. on July 4. Six new beers will be released throughout the day, including two barley wines, an imperial red and a chocolate mint stout. Also catch live music and food from Vladi's

The floors have been sanded down to the original wood and new paint is on the walls, along with local art, at the newly re-opened Stagecoach Inn.
