Coquette to occupy former Smiley's

The sudden closure of Smiley's Bakery and Café left many Springsters sad, but Coquette’s Bistro & Bakery is ready to turn the frown upside down (yeah I just wrote that) with news that it's taking over the neighboring storefronts.

The outfit anticipates being open by March 1 in the 2,800 square feet that comprise 323-325 N. Tejon St. — they're currently occupying 321 N. Tejon St. — with their bakery operations relocating from Spectra Drive across town (which has never been open for retail business). 

Co-owner Michelle Marx says the new Coquette will "look much different" than Smiley's in terms of the layout, with a front retail and cafe space backing up to a much larger, closed-off production area. New breakfast hours are also planned in coordination with the expansion.

“Our relationship with Whole Foods has been growing in the region and we were limited with output where we are now. We learned that Amy (of Smileys’) had chosen to retire and we couldn’t let the opportunity to keep a bakery there pass us by,” says co-owner Michelle Marx. ...

The new location will have expanded take-away foods/meals and there will be café seating for those that just want pastries and coffee. Turu Marx-Eurich, co-owner, notes , “We’ll now be able to expand our retail area now as we could never keep enough in stock. We’ll have a space where customers can sit and consult with the bakers for custom baking, like specialty cakes, wedding cakes, catering, etc. Also, our useable patio area will also almost double size which we’re very excited about.”

A recent survey of favorite restaurant types state-by-state, Colorado’s # 1 choice was Gluten Free! Coquette’s has reigned #1 Gluten Free in the Springs for going on 6 years and has been getting similar recognition for their dessert sand bakery.
