We named them our favorite dish
in 2010 (back when we felt like indulging in such picky lists), following a glowing review of Nosh
from earlier in the year.
It was Lyons' touch that still shapes Nosh's offerings today (and yes, those wings have never been the same without him), and as a community we were proud to see the young chef go far. Like, New York City far, earning New York Times ink
The cool news is he hasn't slowed down, nor been able to escape acclaim for those killer wings despite probably doing a hundred other awesome things since. (Another chef, one I worked for, was haunted by a fantastic mushroom soup rendition and a chili-stuffed chicken — he'd yell at us when we sold too many and couldn't push specials on guests instead. Pigeonholing happens.)

Lyons' wings, naming them among the 100 best dishes in New York City
for 2014 in the "best meat" category.
