UPDATE: Storybook Brewing opens & more brews news

A correction coming from Trinity Brewing Co.'s president, Jason Yester, regarding one of the medals he recently won at the Festival of Barrel Aged Beer:
I'm voluntarily returning the silver medal for Wild/Brett that we just won at Fobab, as we shipped the wrong beer for judging and an all Lacto beer was given a medal.

With the Swingline project we put together in 2014, our core goal was to educate about the distinct differences between Brettanomyces and Lactobacillus .. this kind of confusion ruins the entire intent/direction of that project.

Forget the early teaser on this one: Storybook Brewing opens today at 4 on 3121-A N. El Paso St. in a 1740-square-foot space with 740 of it devoted to a six-handle taproom. 

As Focus on the Beer's Ryan Hannigan points out, "our area has become a hotbed for new breweries," as more and more nano outfits continue to pop up. (Keep in mind we still have places like Gold Camp Brewing on the way.)

We too chatted with Storybook owner and brewer Pete Kilman ahead of our Dec. 3 Side Dish column. But for now, a bit of an overview: Kilman's been a homebrewer for 17 years, as long as he's also been a tech guy for a local software company by day. He brews on an all-electric, three-barrel system that's arguably more energy efficient and he's also rigged a more eco-friendly walk-in cooler with the help of a CoolBot unit. 

The name "Storybook" stems from an album called Storybook Tripper that Kilman wrote in 1990 (he's also a musician), and it was chosen by his wife and 23-year-old daughter, even though at first he worried that "it sounded like a place for children." 

Kilman jokes that he also wasn't a fan of an initial dragon sketch that looked more like a goat to him — it's since been tweaked to provide some very cool logos and labels.

Another big part of Kilman's story is a family dynamic grander than most: He's one of 14 children and currently counts more than 50 nieces and nephews. He says he found no shortage of labor help to get open from the family Rolodex.

As for offerings, you'll see a porter, Kölsch, red, brown, and American pale ale currently listed on his site; a nitro version of the porter will fill the sixth tap handle for now. Kilman would like to release some gluten-reduced beers à la Widmer Brothers' Omission, as well, perhaps as early as January.  

Also look for Wednesday night hop-infusion nights highlighting a different hop each week, via a HopRocket gadget. 

• Speaking of Wednesday night beer events, Fieldhouse Brewing Co. will release a White Chocolate Wheat (a Dunkleweizen featuring a half-pound of white chocolate) tomorrow for its Test Tap Wednesday series, to be paired with goodies from Treehouse BBQ

And also speaking of gluten-free brews, they'll release a GF milk stout and GF version of along with their regular Brinner maple nut brown on Saturday. A gluten-free and regular chai brown will follow on Dec. 5.

• Lastly, a belated congrats to Trinity Brewing Co. for recently earning two silver medals at the Festival of Barrel Aged Beer (Fobab) in Chicago, as well as making Draft Magazine's top 25 beers in the world list for the second consecutive year. 

Trinity's Easy Swinger Wild IPA garnered both accolades, winning in the Wild Beer/Acidic category at Fobab, while its 365 Day Golden Sour won in the Wild Beer/Brettanomyces category.
