back in 2011, had hoped to be up and running by the time Colorado Springs Craft Week
rolled around, today.
And they are a step closer, having just got their federal approval, but brewer Travis Fields says he's still waiting on his fermenters to arrive so he can ramp up production for a grand opening.
That said, he's currently running off his five-gallon homebrew-style system to finish preparations for his tap-takeover at the Wild Goose Meeting House
on Saturday, May 3 at 5 p.m.
So he will still be participating in Craft Week, including the Colorado Springs Locavore Beer Dinner
at McCabe's Tavern on Monday, April 28, and the Crafters' Festival
on Friday, May 2 at Venue 515.
All of which is to say you have three chances to try Fieldhouse ahead of its official opening — likely sometime in mid-to-late May it now appears.
I dropped by 521 S. Tejon St. today for a sneak peek at the space, which has largely taken shape and should look great once polished for the opening. Once the paper comes off the front windows that face Tejon Street, passersby will be able to look directly into the brew room, past a row of fermenters and down a line of brew tanks. A window in the front hallway will also offer a view of the space, as will French doors that face the bar area.
Travis and Nicole Fields have overhauled much of the brewery themselves — from tiling and electrical work to building a beautiful dark bamboo bar. It's an impressive amount of DIY-labor from the young couple (and parents of two small children), hinting at the kind of dedication and craft precision we can expect from the beers.
