There are big supporters of the effort to eat like our ancestors. Of course, there are others who call bullshit
on the whole idea of a paleolithic diet
. But if you're one of the former and have a few bucks, you should know that we got an email from Iva Paleckova
, who's trying to open one of the few paleo-centric restaurants in the state: Blooming Beets Kitchen
"Paleo is not just about cavemen eating raw meat or jocks eating protein shakes," Paleckova says in the release. "I want to bring really sustainable, all-natural gourmet food to Boulder — sure, it's all going to be organic, farm-fresh, gluten-free, low-inflammation, low-allergen, low-carb, yada yada yada, but it's also going to be really great food that everyone can enjoy. That's the beauty of Blooming Beets — I want to show people just how good healthy food can be."
If that sounds like your cup of, uh, farro tea, then check out the restaurant's indiegogo page
, where Paleckova's trying to raise $35,000 from paleo enthusiasts.
