Paragon moves to new building

Chef Victor Matthews of Paragon Culinary School insists he's on to bigger and better, having just moved the school from 3125 Sinton Road (off I-25 and Fillmore Avenue) to 505 Popes Bluff Trail (off Garden of the Gods Road).

Paragon will share the space, a former Hilton hotel, with a local chapter of Youth with a Mission.

Having left another former hotel husk, Matthews says the new space has a similar layout, but with more space (enough to teach up to seven classes at once) and nicer, newer equipment.

"This is a great day for Paragon students," says Matthews, who notes 100 percent retention with the move, saying his students "don't panic" with change — something inherent to professional cooking.

Addressing rumors related to a sudden closure at the old site, Matthews confirmed that his landlords locked the doors on his staff while he was out of town, and that a rent-related legal dispute will likely ensue.
