We just learned of a new outfit, Crepes Francaise, which opened Friday at 321 N. Tejon St., the former location of Flavors on Tejon.
Owner Florence Reinhardt, who is originally from Cameroon and has lived in the Springs for the past 13 years, says she travels internationally a lot, and wants to bring some of those flavors home. Particularly, her love of classic crepes.
To "call the shots," Reinhardt enlisted former Blue Star chef James Davis, whom she first met when the Blue Star was located in Old Colorado City. She owned a clothing store next door at the time.
Davis, whose arm is currently in a sling from an accident, recruited his former sous chef Matt Carter, who cooked with him over a period of eight years. With them also is pastry chef Marcel Chéne.
As for what they'll do with the space, Davis says for now, it's "raw, honest, classic crepes, across the board. No bells and whistles." But once his arm heals and the outfit obtains a liquor license, "out come the cassoulets, the steak and frites, the smoked pheasant ..."
Currently, the menu has about seven savory crepes — "if you went to France tomorrow, you'd see these," says Davis — and a handful of traditional sweet crepes, as well as some tarts and the like for dessert.
Davis says he might in the future offer crepes out the front door, so that
streetwalkers people walking by can grab them easily on the go.
