Side dish: A restaurant revival for Pueblo

Around early August, the Steel City will see the revival of a history-steeped restaurant that's "a household name in the Pueblo area," according to project president Joe Herbert.

Muggsy's Inn (muggsysinn.com) will now be located on the ground level of a condominium structure at 115 E. Riverwalk, on the Pueblo Riverwalk. It originally opened in 1954 at 2131 E. Evans Ave., adjacent to the Pueblo Steel Mill (in an eatery previously called Novaks that dated back to 1923). Herbert says the former Muggsy's went under when the city smoking ban took effect in 2003.

To achieve the "old feel and touch" of Muggsy's, Herbert has dismantled and refinished the original bar and re-created booths in the former style. Plus, he's planned menu items that pay homage to Pueblo culture and history, like a Dutch Lunch and Bojon stew. Some history: The Dutch Lunch, a cold-cut platter with bread, tomato, onion, pickles and relish, is an old steel-mill tradition that's still served out of several Pueblo kitchens. The sausage-containing Bojon stew comes from Slovenians who arrived in the late 19th century, along with Germans, Italians and people of other nationalities, to work the mills.

You'll otherwise find a "simple" menu of burgers made with Colorado beef and other popular bar/grill items.

Rolling in soon

The former Wings-Pizza-N-Things space at 9205 N. Union Blvd. will host Sushi Rakkyo, as soon as late July. Korean owner/sushi chef Young Hong says he's been preparing sushi for 22 years between his home country, California and Denver. He recently sold his four-year-old Aurora eatery called Sushi Katsu, which offers all-you-can-eat sushi for $13.95 at lunch and $23.95 at dinner. Hong envisions the same concept and pricing here in the Springs.

Now sprouting

Stay-at-home mom Carrie Miller and her carpenter husband Ryan launched the Springs' first sprout CSA in early June, called Sunny Sprouts (301 Cheyenne Blvd., 694-8656). Customers can sign up for 10-week increments anytime, year-round (as sprouts are grown in jars, indoors, within six to seven days), with options ranging from $30 to $122.50.

Dip down

May 31 saw the end of the The French Dip (3125 Sinton Road) — formerly Diane's Coffee Shop and Restaurant — leaving co-owner Jim Krug to focus on his other ventures.

"The way the economy is right now, we're just kind of holding our own on our Bargain Mart stores, and just going to try and survive right now," he says.
