Previewing the Broadmoor's new Italian restaurant

The Broadmoor is unveiling a pair of new eateries in the coming months. One of them, a clean-living-focused outfit called the Healthy Epicurean, is still in the development stage. But Ristorante del Lago, the Italian replacement for Charles Court, is drawing nearer toward public access.

"A new exhibition kitchen gives diners a glimpse into the action and a unique Salumi and Formaggio aging room," reads a statement to the Indy from the hotel, which will also replace the West Lobby Bar with Bar del Lago. "Some unique and special features include: a Bonnet Rotisserie, a Parma Crown Anniversary Slicer (Specially designed to celebrate the 50th Anniversary of The Consorzio del Prosciutto di Parma) and a wood-burning oven for pizzas add to the panache of the restaurant. Exquisite Sambonet dessert trolleys will display the luscious creations from our pastry team."

Designed by Adam Tihany — who also designed the hotel's Summit restaurant, not to mention Thomas Keller's Per Se, and The Bocuse Restaurant at the Culinary Institute of America — del Lago will preview its menu at four dinners at Summit in the coming months, prior to its full opening later this year. Castelfeder Winery
The Castelfeder Wine Estate, owned and operated by the Giovanett family, is a 4th generation family winery estate located at the core of Lower Alto Adige, in Northern Italy. The evening will be hosted by Ines Giovanett, representing the 3rd generation of the family.

Menu highlights include Smoked Pork Loin with caramelized apple puree, and toasted rye crisp; Slow Cooked Veal with apples, bacon, and vinaigrette, and Speck dell’ Alto Adige, with roasted potato gnocchi, asiago, and butter sauce.

Bersano Winery

The evening will be hosted by Erika Abate, a sommelier and brand manager for Bersano Winery.
